Great Western symbolises the initiative and effort we recognise as 'tradition' in producing quality sparkling and table wines. The strength of Seppelt winemaking expertise, viticultural knowledge and technical experience is evident in every bottle. At Great Western, all sparkling wine is bottle fermented in the traditional method, whether it eventually becomes inexpensive Imperial Reserve or the top-of-the-range Salinger. Salinger is made from the classic Champagne grape varieties Chardonnay, Pinot Noir and Pinot Meunier, with up to five per cent of aged reserve wines for added complexity. The winemakers emphasise the importance of assemblage, the blending of base wines from different regions and grape varieties, with each component wine contributing to the finished blend.
